Bethany's Scrumptious Apple Cake
APPLE CAKE, APPLE CAKE, YES YES YES!
Ingredients:
1 1/2 cup vegetable oil (or 3/4 c. vegetable oil and 3/4 apple sauce)
1 cup brown sugar
1 cup granulated sugar
3 eggs
1 teaspoon vanilla
3 cups flour
1 teaspoon salt
1 heaping teaspoon cinnamon
1 teaspoon baking soda
Between 3 1/2 and 4 cups Apple (peeled, cored, and diced)
Optional: 1 cup raisins and/or 1 cup chopped walnuts
Prepare:
Preheat the oven to 350 degrees and grease and flour a bundt pan. In a medium mixing bowl add flour, salt, cinnamon, baking soda, and stir to combine and set aside. The large mixing bowl mix together the oil and both sugars until smooth add eggs one at a time stirring until each is incorporated. Stir in the vanilla. Add the flour mixture into the bank ingredients stirring to mix in flour. It should have a smooth and thick batter. Fold in apples, and if you're using them, the nuts and raisins. Spoon batter into prepared pan. Bake approximately 1 hour checking for doneness.
Bethany's Notes: I like using a bundt pan, but you can also use a 9x13 baking dish, but it may not take as long to bake! Also, I like to use Evercrisp apples or Golden Delicious apples; really you'd like to use something sweet and that holds their shape while baking.
